Paul has been in the baking industry all his working life starting with an apprenticeship in 1967. During his apprenticeship Paul moved from Rangiora (his hometown) to the West Coast and upon returning to Rangiora, became a key member for 28 years in the catering company Continental. As their catering manager for 25 years Paul gained a vast knowledge and experience of the hospitality industry while traveling throughout the South Island.
Among the many functions he was involved in, Paul supervised the various functions which the Queen attended during her visits to NZ, to the Golden Oldies Rugby celebrations catering for approximately 6000 guests.
Paul has since sold Jackson's Bakery & Cafe (which he operated for eight years)so he could concentrate on producing quality gluten free product. To achieve this Paul has had a bakery purpose built so he can guarantee that all product manufactured is 100% gluten free. He began specializing in gluten free product when an elderly gentleman asked if he could supply gluten free bread for his gluten intolerant daughter.
Being a diabetic, Paul was and is very aware of the difficulty of purchasing specific dietary products and so the challenge was set.
As with all things there were failures to begin with however the successes soon overtook the failures with his vast range of gluten free products going from strength to strength.
During his spare time, of which there is little, Paul is a volunteer Ambulance officer for St John and loves to go whitebaiting during the season.
